One Pan Buffalo Chicken Tacos
Craving something spicy, cheesy, and weeknight-easy? These one-pan Buffalo Chicken Tacos bring the heat with simple, organic ingredients and a super creamy homemade ranch to cool it all down. Tender bites of organic chicken get a quick seasoning of garlic, onion, paprika, salt, and pepper, then cozy up with sautéed onion and pepper for that sweet-savory balance Buffalo lovers live for. A buttery hot sauce bath ties everything together so every bite is tangy, rich, and just the right amount of fiery.
For the shells, I use Vista Hermosa tortillas because they crisp beautifully without getting tough. A handful of shredded Monterey Jack melts into the Buffalo chicken and turns these into the ultimate crunchy-gooey situation. Don’t skip the sprinkle of extra cheese on top before they bake that little layer becomes a golden, lacy crust that’s ridiculously satisfying. Finish with a shower of sliced green onions for fresh bite and color.
The ranch is the real MVP here: sour cream, Chosen Foods mayo, a splash of buttermilk, dill, parsley, garlic, onion, and a squeeze of lemon. It’s bright, herby, and made with ingredients you can pronounce. Drizzle it over the tacos or keep it on the side for dunking either way, it balances the spice and adds that cool, creamy finish you want with Buffalo anything.
My Favorite Brands to Use in this Recipe:
- Bell & Evans Organic Chicken – Their chickens are raised without antibiotics or added hormones, fed a 100% organic, all-vegetable diet, and humanely cared for from hatch to harvest. What truly sets them apart is their air-chilled process. Instead of using chlorinated water baths like many brands, Bell & Evans air-chills their chicken resulting in better flavor, improved texture, and no added water weight. It means a crispier sear, juicier bites, and a more pure, natural taste. I trust it every time I want to serve something clean, simple, and truly delicious.
- Organic Vegetables– Organic produce is grown without synthetic pesticides or GMOs, preserving natural nutrients and flavors while reducing exposure to toxins. Opting for fresh, organic vegetables ensures you’re getting the cleanest, most nutrient-dense ingredients in every bit.
- Chosen Foods Avocado Mayo – Made with real, wholesome ingredients and heart-healthy avocado oil instead of inflammatory seed oils like canola or soybean. It’s free from added sugars, artificial preservatives, and GMOs, making it a cleaner option for everyday meals. Rich in monounsaturated fats and full of flavor, it’s a nourishing swap that supports better health without sacrificing taste.
- Vista Hermosa Tortillas – These tortillas are made with real, non-GMO ingredients and no artificial preservatives. They have a soft texture and authentic flavor that makes a huge difference in any enchilada or taco dish — a total upgrade from the overly processed options on most grocery shelves.

- 1 small Onion (diced)
- 1 small Pepper (diced)
- 1/2 cup Hot Sauce
- 2 tbsp Butter
- 6 Tortillas (My favorite brand is Vista Hermosa)
- Moneterey Jack Cheese (shredded)
- Garlic Powder, Onion Powder, Paprika, Salt, Pepper
- Green Onions (for topping)
For the Ranch
- 1/2 cup Sour Cream
- 1/2 cup Mayo (My favorite brand is Chosen Foods)
- 1/4 cup Buttermilk
- Onion Powder, Garlic Powder
- Dill, Parsley
- Juice of half a lemon
Instructions
- Cut the chicken into bite-sized pieces and season well with salt, pepper, garlic powder, onion powder, and paprika. Mix until the chicken is evenly coated.
- Heat a skillet over medium heat and spray lightly with avocado oil. Dice the onion and pepper, sauté until softened, then add the chicken. Cook on each side until golden brown and make sure the internal temperature reaches 165°F.
- While the chicken cooks, warm one cup of hot sauce in a small saucepan with two tablespoons of butter until the butter melts and the sauce is combined. Pour this over the cooked chicken and stir to coat.
- Preheat your oven to 400°F. Line a baking sheet with parchment paper and brush both sides of your tortillas with a thin layer of olive oil. Place them in the oven for a few minutes until they’re warm and pliable.
- Add buffalo chicken and shredded Monterey Jack cheese to one side of each tortilla, fold it over, press gently, and sprinkle a little extra cheese on top. Bake for about 15 minutes, or until the tortillas are golden brown and crispy.
- To make the homemade ranch, whisk together half a cup of sour cream, half a cup of mayo, and a quarter cup of buttermilk. Add onion powder, garlic powder, a sprinkle of dill and parsley, and the juice of half a lemon. Mix until smooth and creamy.
- Serve the tacos hot with plenty of ranch on the side for dipping or drizzling.
