Healthy Short Rib Soup: A Perfect Fall Comfort Meal

As we welcome the first day of fall and embrace soup season, this hearty Short Rib Soup is the perfect dish to warm you up. Packed with fresh vegetables, aromatic herbs, and high-quality protein, this soup offers a nourishing, satisfying meal. With LotusFoods organic brown rice ramen as the star ingredient, you can enjoy a healthier, wholesome twist on traditional ramen, all while staying away from additives and preservatives.

Why These Ingredients Are Better for You:

  1. Grass-Fed Short Ribs or Chuck Roast
I chose grass-fed short ribs (or chuck roast) for their exceptional flavor and tenderness. Grass-fed meats are not only more nutrient-dense, but they also contain higher levels of conjugated linoleic acid (CLA)—a powerful nutrient linked to cancer-fighting benefits and a boost to overall immune function. Plus, grass-fed beef is free from hormones and antibiotics, making it a cleaner, healthier choice for you and your family.
  2. Kettle & Fire Beef Broth
This beef bone broth is an absolute game-changer! Made from 100% grass-fed, pasture-raised bones, KettleandFire broth is loaded with collagen, amino acids, and minerals like calcium and magnesium. These nutrients support joint health, promote healthy skin, aid digestion, and bolster immunity. It’s also free from artificial additives and hormones, offering a rich, clean base for your soup.
  3. LotusFoods organic brown rice ramen
Traditional ramen often comes with high sodium and artificial preservatives, but @LotusFoods offers a healthier alternative. Their organic brown rice ramen noodles are made with whole grains, which provide more fiber and nutrients than refined wheat noodles. Lower in sodium, free from MSG and additives, and made from organic rice, this ramen is a better option for maintaining a balanced diet while enjoying your favorite comfort food.
  4. Shiitake Mushrooms, Celery, Garlic, Onion, Ginger, Green Onion
These fresh vegetables and herbs don’t just add great flavor to your soup—they’re also packed with health benefits! Shiitake mushrooms are rich in antioxidants, vitamin D, and immune-boosting compounds. Garlic and ginger are both powerful anti-inflammatory foods that support digestive health and promote circulation. Celery, onions, and green onions bring in essential vitamins, fiber, and antioxidants, all while enhancing the depth of flavor.

Why You’ll Love This Soup:

This Short Rib Soup is a wholesome, nourishing meal that’s perfect for fall. With its rich, flavorful broth, tender meat, and hearty vegetables, it’s sure to become a favorite in your meal rotation. And by choosing clean, organic ingredients, you can enjoy a comforting, nutrient-packed meal that’s not only good for your body but also for the environment. Healthy Short Rib Soup

Ingredients

  • 1.5 lbs Grass Fed Short Ribs Or Chuck Roast
  • 8 ounces Shiitake Mushrooms, sliced
  • 3 stalks Celery
  • 4 cloves Garlic
  • 1 Onion
  • 2 inch Ginger
  • 6 Green Onions
  • 8 cups Kettle & Fire Beef Broth
  • 2 packs Lotus Foods Organic Brown Rice Ramen

Instructions

  1. Heat the Instant Pot on the "Sauté" function. Season the grass-fed short ribs (or chuck roast) with salt and pepper. Add the oil to the pot and sear the meat on all sides until browned, about 5-7 minutes.
  2. Once the meat is seared, add the chopped shiitake mushrooms, celery, onion, garlic, and ginger to the pot. Pour in the beef bone broth and stir well. Ensure the meat is mostly submerged in the brot
  3. Close the Instant Pot lid and set it to cook on high pressure for 1 hour. Once cooking is complete, allow the pressure to release naturally for about 10 minutes, then quick release the remaining pressure.
  4. Open the Instant Pot and carefully remove the short ribs (or chuck roast). Shred the meat using two forks and return it to the pot. Add the Lotus Foods organic brown rice ramen and stir. Set the Instant Pot back to the “Sauté” function, and cook the ramen for 3-5 minutes, or until the noodles are tender.
  5. Taste and adjust seasoning with salt and pepper as needed. Ladle the soup into bowls, ensuring each serving gets a good amount of the tender shredded meat, vegetables, and ramen. Garnish with chopped green onions and serve hot.
