Instructions

Sourdough Buns

  1. Combine sourdough starter, flour, water, honey, and salt in a large bowl. Mix until fully combined. Cover and let rest for 30 minutes.
  2. Perform 3 stretch-and-folds, 30 minutes apart, to develop gluten.
  3. Cover the dough and let it rise until doubled in size (about 6 hours or overnight).
  4. Turn the dough onto a floured surface and divide it into 6 equal portions. Shape each piece into a ball and place on a parchment-lined baking sh
  5. Cover and let the buns rise for 1–2 hours. Preheat your oven to 375°F.
  6. Brush the tops of the buns with the egg wash (1 egg and 1 tbsp milk) and sprinkle with sesame seeds. Bake for 25 minutes, or until golden brown.

Non-Sourdough Buns

  1. If you’re short on time and can’t make the sourdough version, this is my quicker go-to: In the bowl of a mixer, combine 1 cup warm water, 2 tbsp sugar, and 1 tbsp yeast. Make sure the water isn’t too hot, or the yeast won’t activate. Let it sit for 10–15 minutes until the yeast is foamy
  2. Add 3 cups flour, 1 tsp salt, 3 tbsp melted, butter, and 1 egg to the mixer and knead for 5 minutes. Add small amount of flour if necessary, the dough should be smooth and elastic. Place ball of dough in a lightly oiled bowl and cover with a tea towel for about 1-2 hours or until dough doubles in size.
  3. Roll the dough into a long log and cut it into 8–10 equal pieces. I like to weigh each piece at about 85 grams to keep them uniform. Shape each piece into a ball and gently flatten with your palm. Place the dough balls on a parchment-lined baking sheet, cover with a towel, and let rise for 30–60 minutes, or until doubled in size.
  4. Preheat oven to 375 degrees. Mix 1 egg and 1 Tbsp milk together. Brush over rolls and sprinkle with sesame seeds. Bake for 18-20 minutes until tops are golden brown, rotating the pan halfway through.

Waffle Fries

  1. Use a crinkle cutter to slice organic russet potatoes into waffle shapes, about ½-inch thick. Rotate the potato 90 degrees after each slice for the iconic waffle pattern.
  2. If you have the time, soak the potatoes in cold water for 30 minutes to draw out excess starch this step is optional, but it helps them get extra crispy.
  3. Pat the potatoes dry, then season with sea salt, garlic powder, paprika, and black pepper.
  4. Heat avocado oil in a deep pan to 375°F. Fry the potatoes in small batches, making sure the fries don’t touch. Cook for about 5 minutes, flipping as needed, until golden brown and crispy.
  5. Transfer the fries to a towel-lined baking sheet and season right away with sea salt and spices. To keep them warm while you cook the chicken, place them in the oven on low heat or the ‘keep warm’ setting.

Cripsy Fried Chicken

  1. Since chicken breasts are usually quite large, I like to slice them in half (right down the middle.) You can do the same or leave them whole it’s up to you.
  2. In one bowl, mix together flour, paprika, black pepper, chili powder, salt, garlic powder, and onion powder. In a separate bowl, whisk the milk and egg until well combined.
  3. Coat the marinated chicken in the flour mixture, dip it in the milk mixture, then return it to the flour for a final coating
  4. Heat avocado oil in a skillet over medium heat. Cook the chicken for 3–4 minutes per side, until golden brown and an internal temperature of 165°F is reached.

Homemade Chick-fil-A Sauce

  1. In a bowl, mix 1/2 cup mayo, 1 tsp Dijon mustard, 3 tsp yellow mustard, 2 tsp BBQ sauce, 2 tbsp honey, garlic powder, paprika, and a splash of lemon juice.
  2. Whisk until smooth and creamy. Adjust seasoning to taste.
