The Benefits of Homemade vs. Store-Bought Tzatziki
Making your own tzatziki sauce means skipping the unnecessary preservatives, added sugars, and artificial thickeners found in store-bought versions. Greek yogurt provides a natural source of probiotics, supporting gut health and digestion—key factors in maintaining overall well-being, especially during a cancer-healing journey.

Instructions
For the Chicken
- In a bowl, mix olive oil, smoked paprika, coriander, cumin, turmeric, cayenne, cinnamon, salt, and black pepper.
- Rub the spice mixture onto the chicken thighs and let them marinate for a few hours.
- Heat a large skillet over medium-high heat and sear the chicken for 4-5 minutes per side, until golden brown and cooked through (internal temp: 165°F). Let rest before slicing.
For the Tzatziki
- Place your graded cucumber in a small bowl and sprinkle with salt.
- Use a tea towel to squeeze as much of the liquid out of the cucumbers.
- Combine the cucumbers, yogurt, garlic, lemon juice, lemon zest, chopped dill, and olive oil in a bowl. Mix well, then refrigerate to chill.
For the Roasted Red Pepper Hummus
- If you have a gas stove, char the peppers directly over the flame until blackened on all sides. Alternatively, roast them in a 450°F oven for 10-15 minutes until the skins blister.
- Transfer the hot peppers to a bowl and cover with foil to steam for 5 minutes.
- In a high-speed blender or food processor, combine chickpeas, tahini, olive oil, lemon juice, garlic, salt, and seasonings.
- Remove the stems and seeds from the roasted peppers and add them to the blender.
- Blend on medium-high speed until smooth and creamy
- If the hummus is too thick, slowly add a little water until it reaches your desired texture.
For the Bowls
- Cook the long-grain white rice according to package instructions with a pinch of salt. Once done, fluff with a fork and drizzle with a little olive oil for extra flavor.
- Divide the rice into bowls.
- Top with sliced chicken, cucumbers, red onion, cherry tomatoes, tzatziki, hummus, and pita.
- Sprinkle with crumbled feta cheese and drizzle with a touch of extra-virgin olive oil.
