pb & j granola bars

There’s nothing quite as nostalgic as a peanut butter and jelly sandwich but what if you could enjoy that same classic flavor in a wholesome, protein-packed bar? These homemade PB & J Granola Bars are the perfect answer. They’re chewy, naturally sweetened, and layered with a fresh berry chia jam that feels like a grown-up twist on the childhood favorite.

Making granola bars from scratch means you know exactly what’s going into them—no fillers, no preservatives, just real ingredients that fuel your body. Plus, the flavor and texture are miles ahead of store-bought. With simple pantry staples, a quick stovetop jam, and less than 15 minutes of hands-on time, you’ll have a batch of bars ready to keep you energized through busy mornings, workouts, or that mid-afternoon slump.

My Favorite Brands to Use in This Recipe:

  • Just Ingredients Vanilla Protein Powder – My favorite protein brand! Rich and creamy vanilla bean, all-natural protein powder made with four different protein sources and flavored without artificial sweeteners or sugar alcohols. Made with non-denatured 100% grass-fed non-denatured whey from New Zealand.
  • Organic Peanut Butter – Free from artificial additives, hydrogenated oils, and excess sugar, making it a heart-healthy choice packed with natural protein and healthy fats.
  • Organic Berries – Unlike conventionally grown berries, organic varieties are free from synthetic pesticides, herbicides, and harmful chemicals that can linger on your food. They’re grown in healthier soil, which often means richer nutrients and antioxidants in every bite. Plus, organic farming supports pollinators, protects the environment, and helps preserve clean water and healthy ecosystems.

Ingredients

  • 2 cup Oat Flour
  • 1/2 cup Just Ingredients Vanilla Protein Powder
  • 1/2 tsp Salt
  • 1/2 cup Peanut Butter
  • 1/2 cup Honey
  • 1 tsp Vanilla Extract
  • 1/3 cup Milk
  • 1 cup Raspberries
  • 1 cup Strawberries
  • 2 tbsp Chia Seeds
  • 1 tbsp Honey

Instructions

  1. In a mixing bowl, combine the oat flour, protein powder, and salt.
  2. Stir in the peanut butter, honey, and vanilla until well mixed.
  3. Add milk one tablespoon at a time, mixing until a thick dough forms (using your hands makes it easier!).
  4. Press about ¾ of the dough firmly into a parchment-lined 8×8 pan or a granola bar mold to form the base.
  5. In a small pot on the stove, warm the raspberries and strawberries, then mash them. Stir in the chia seeds and a drizzle of honey to make the jam.
  6. Spread the jam evenly over the dough base, then crumble the remaining dough on top.
  7. Chill in the refrigerator for at least 30 minutes. Slice into bars and enjoy!
