These S’mores Granola Bars are my wholesome twist on the childhood favorite: chewy, chocolatey, a little gooey, and made with ingredients you can actually feel good about. They capture everything you love about s’mores without the campfire or the sugar crash.
Instead of processed sugars and fillers, I’m using organic creamy peanut butter, raw honey, and a boost of grass-fed collagen and clean vanilla protein for extra staying power. Mini chocolate chipsand Dandies mini marshmallows bring in that nostalgic s’mores flavor, while chia seeds and rolled oats add fiber, healthy fats, and just the right amount of crunch.
They’re the kind of bar that feels indulgent but fuels your day perfect as a post-workout bite, tossed in a lunchbox, or savored during your mid-afternoon slump with a cup of tea. The best part? They come together in just one bowl, no baking required, and store beautifully in the fridge for grab-and-go snacking all week long.

Instructions
- Line an 8×8-inch baking dish with parchment paper, or use a silicone granola bar mold (I found mine on Amazon and love it for easy cleanup!).
- In a small saucepan over low heat or in the microwave gently melt the peanut butter and honey together. Stir until the mixture is smooth and well combined.
- Remove from heat and stir in the vanilla extract.
- In a large mixing bowl, combine the oats, protein powder, collagen, and chia seeds.Pour the peanut butter mixture over the dry ingredients and stir until everything is evenly coated.
- Gently fold in the mini chocolate chips and marshmallows until they’re spread throughout the mixture.
- Transfer the mixture to your prepared pan or mold. Press it down very firmly using your hands or the bottom of a measuring cup don’t skip this step! It helps the bars hold together once they’re set.
- Refrigerate for at least 2 hours, or until the bars are completely firm.
- Once chilled, lift the mixture out using the parchment paper and cut into 12 even bars. Wrap each one in parchment paper and store in an airtight container in the fridge for an easy grab-and-go snack.
