Strawberry Chicken Salad with Maple Balsamic Dressing

Nourish to Flourish: Strawberry Chicken Salad with Maple Balsamic Dressing

Some of my favorite meals come together with just a few fresh ingredients and a little intention — like this strawberry chicken salad. It’s bright, full of flavor, and made with nourishing, organic ingredients that feel good in the body, especially when healing is the goal.

I made this with what we had on hand — sweet organic strawberries, crisp romaine, creamy goat cheese, sunflower seeds for crunch, and grilled organic chicken for protein. It all comes to life with a creamy homemade maple balsamic dressing that pulls everything together. No processed stuff, just real ingredients that fuel and support.

This salad is perfect for a light lunch or dinner — and it’s become one of our staples. It’s easy to make, super customizable, and hits that balance of sweet, savory, creamy, and crunchy in every bite.

Ingredients

For the Salad:

  • 1 head Organic Romaine Lettuce
  • 1 cup Organic Strawberries
  • 1/4 cup Goat Cheese
  • 1 lb Organic Chicken Breast
  • 2 tbsp Sunflower Seeds

For the Maple Balsamic Dressing:

  • 4 tsp Maple Syrup
  • 4 tsp Dijon Mustard
  • 4 tsp Avocado Mayo (I like the brand Chosen Foods)
  • 4 tbsp Balsamic Vinegar
  • 6 tbsp Extra Virgin Olive Oil
  • Dried Oregano

Instructions

  1. Grill or pan-cook the organic chicken breast with a little olive oil, sea salt, and black pepper until fully cooked (internal temp should hit 165°F). Let it rest before slicing thinly.
  2. In a small jar or bowl, whisk together maple syrup, Dijon mustard, avocado mayo, balsamic vinegar, olive oil, oregano, salt, and pepper until smooth and creamy. Taste and adjust seasoning if needed. (You can shake it in a jar for an emulsified finish!)
  3. In a large bowl or on two plates, layer romaine, strawberries, goat cheese, sunflower seeds, and sliced chicken.
  4. Drizzle your maple balsamic over the salad just before serving. Toss lightly or leave it layered for a beautiful presentation.
