Teriyaki Chicken Tacos with Creamy Cucumbers

When it comes to weeknight dinners, I always look for meals that strike the balance between feel good ingredients and bold flavor and these Teriyaki Chicken Tacos check all the boxes. They’re made with organic, high-quality ingredients and a short list of trusted brands I use often in my kitchen. The chicken is cooked until tender in a clean teriyaki sauce, then crisped under the broiler for that caramelized, sticky sweet finish. Paired with a creamy cucumber herb slaw, fresh avocado, and a sprinkle of crunchy peanuts, every bite is layered with texture, flavor, and real nourishment.

What I love most about this recipe is how customizable and satisfying it is without feeling heavy. It’s gluten-free adaptable, protein-packed, and filled with fresh herbs that offer a natural boost of antioxidants. The creamy slaw gets its richness from Greek yogurt and avocado mayo instead of heavy dressings, and the chili crunch adds a little heat without overpowering. It’s a recipe that makes you feel good during and after eating exactly what I aim for in my kitchen.

If you’re looking for a new go-to dinner that your whole family will love and that supports your wellness goals, this one’s a must-try. It comes together quickly, looks beautiful on the plate, and tastes even better the next day. Let’s get cooking!

My Favorite Brands to Use in this Recipe:

  • Bell & Evans Organic Chicken – Their chickens are raised without antibiotics or added hormones, fed a 100% organic, all-vegetable diet, and humanely cared for from hatch to harvest. What truly sets them apart is their air-chilled process. Instead of using chlorinated water baths like many brands, Bell & Evans air-chills their chicken resulting in better flavor, improved texture, and no added water weight. It means a crispier sear, juicier bites, and a more pure, natural taste. I trust it every time I want to serve something clean, simple, and truly delicious.
  • Organic Greek Yogurt – I love using Kirkland Signature Organic Greek Yogurt because it’s a clean, high-quality staple that adds creaminess and protein to so many of my recipes, without all the unnecessary additives. It’s made with just a few simple ingredients, including organic milk and live active cultures, which support gut health and digestion. I use it as a base for dressings, in smoothies, or even as a healthier swap for sour cream. Knowing it’s organic means it’s free from synthetic hormones and antibiotics, which is especially important to me as I focus on nourishing, healing meals for my family.
  • Organic Vegetables – Organic produce is grown without synthetic pesticides or GMOs, preserving natural nutrients and flavors while reducing exposure to toxins. Opting for fresh, organic vegetables ensures you’re getting the cleanest, most nutrient-dense ingredients in every bit
  • Chosen Foods Avocado Mayo – Made with real, wholesome ingredients and heart-healthy avocado oil instead of inflammatory seed oils like canola or soybean. It’s free from added sugars, artificial preservatives, and GMOs, making it a cleaner option for everyday meals. Rich in monounsaturated fats and full of flavor, it’s a nourishing swap that supports better health without sacrificing taste.
  • Date Lady Sweet Chili Sauce – This chili sauce is a game changer! Unlike conventional sweet chili sauces that are packed with refined sugar and corn syrup, Date Lady’s version is naturally sweetened with organic dates. It delivers the perfect balance of sweet, tangy, and spicy without the crash.
  • Primal Kitchen Teriyaki Sauce – A clean, flavorful twist on a classic favorite. Made with ingredients you can trust like organic coconut aminos, pineapple juice concentrate, and ginger, this soy-free, gluten-free sauce brings bold, umami packed flavor without the junk.
  • Vista Hermosa Tortillas – These tortillas are made with real, non-GMO ingredients and no artificial preservatives. They have a soft texture and authentic flavor that makes a huge difference in any enchilada or taco dish — a total upgrade from the overly processed options on most grocery shelves.

Teriyaki Chicken Tacos

Prep Time5 minutes
Cook Time30 minutes

Ingredients

For the Teriyaki Chicken:

  • 1 lb Organic Boneless Skinless Chicken
  • 1/3 cup + 1/4 cup Teriyaki Sauce (I like the brand Primal Kitchen)
  • 2 tbsp Sweet Chili Sauce (I like the brand Date Lady)

For the Creamy Cucumbers:

  • 1/4 cup Greek Yogurt
  • 2 tbsp Avocado Mayo (I like the brand Chosen Foods)
  • 2 tbsp Rice Vinegar
  • 1 tbsp Sweet Chili Sauce (I like the brand Date Lady)
  • 1 tsp Toasted Sesame Oil
  • 1 tsp Chili Crunch
  • 1/4 tsp salt
  • 1 cup Fresh Herbs sliced (Cilantro, Green Onions)
  • 1/2 tsp Sesame Seeds
  • 1 large Organic English Cucumber

For Serving:

  • 8 6 inch Flour Tortillas (I like the brand Vista Hermosa)
  • Avocado
  • Peanuts
  • Sesame Seeds

Instructions

  1. Season the chicken thighs on both sides with salt and fresh cracked pepper. Place them in an instant pot and add 1/3 cup teriyaki sauce. Toss to the chicken to fully coat each thigh with sauce. Place the lid on the instant pot and set it to sealing. Set the pot to pressure cook for ten minutes.
  2. While the chicken is cooking thinly slice the cucumbers (I like to use my mandolin for this) Whisk together the dressing. Combine Greek yogurt, mayo, rice vinegar, sweet chili sauce, sesame oil, chili crunch and salt until well combined. Toss the dressing with the cucumbers and fresh herbs.
  3. Natural release or quick release the pressure from the instant pot. Remove chicken and use tongs, two forks or your fingers to shred the chicken, it should fall apart easily. Place shredded chicken on a lined baking sheet. Preheat oven to broil. Drizzle with the remaining ¼ cup teriyaki sauce and two tablespoons sweet chili sauce, toss to coat the chicken in sauces. Broil for 3-6 minutes (watch closely because all ovens are different!) until the chicken is crispy and caramelized with dark edges around some of the pieces. Remove from the oven.
  4. Warm the tortillas and layer with crispy teriyaki chicken, creamy cucumber and herbs, sliced avocado, an extra drizzle of the dressing, crushed peanuts and sesame seeds.
