Ingredients
- 1 lb Organic Ground Turkey
- 2 large Sweet Potatoes (diced)
- 1 can Black Beans (drained and rinsed)
- 1 can Tomtatoes (diced)
- 1 Yellow & Green Onion
- 1/2 cup Cheddar Cheese
- 1 tsp Cumin, Cayenne pepper, Chipotle chili powder
- 1/4 cup Salsa (for the sauce)
- 1/4 cup Sour Cream (for the sauce)
- 1 tsp Avocado oil (or your preferred cooking oil)
- 1 cup Rice
- Cheddar Cheese (for topping)
Instructions
- Dice the sweet potatoes, toss them with a light spray of avocado oil, and season with salt, pepper, garlic, and onion. Cook in an air fryer at 400°F for 12–15 minutes, or until tender with a slightly crispy edge.
- Heat avocado oil in a large skillet over medium heat. Add diced yellow onion and sauté until softened. Stir in the ground turkey, season with cumin, cayenne pepper, and chipotle chili powder, and cook until browned. Drain any excess fat if necessary.
- Add the cooked sweet potatoes, black beans, and diced tomatoes to the skillet. Stir well and let simmer for 10 minutes to allow the flavors to meld together.
- In a small bowl, mix the sour cream and salsa until smooth. Set aside.
- Spoon the skillet mixture onto plates or over cooked rice. Top with shredded cheddar cheese, chopped green onions, and a drizzle of the salsa-sour cream sauce. Serve warm and enjoy!
I made this for dinner this week & it’s so tasty! Super easy to make and we loved taking it for lunch just on its own or with rice. Yum!
