Ingredients

For the Apples:

  • 3 Apples (peeled and diced)
  • 1/4 cup Maple Syrup
  • 1/4 cup Water
  • 2 tsp Cinnamon

For the Bars:

  • 1 1/2 cup Oats
  • 1/4 cup Ground Flaxseed
  • 2 tsp Baking Powder
  • 1 pinch Salt
  • 2 cup Milk
  • 2 Eggs
  • 1/4 cup Maple Syrup
  • 1/2 cup Enjoy Life Chocolate Chips

Optional:

  • 2 scoops Protein Powder
  • 1/2 cup Milk

Instructions

  1. In a small saucepan, combine 3 peeled and diced apples, ¼ cup maple syrup, ¼ cup water, and 2 teaspoons cinnamon. Cover and cook over medium heat for 15–20 minutes, until the apples are very soft. For a jammy texture, mash the apples with a potato masher.
  2. In a large bowl, combine 1 ½ cups oats, ¼ cup ground flaxseed, 2 teaspoons baking powder, and a pinch of salt. Stir to mix. Then add 2 cups milk, 2 eggs, and ¼ cup maple syrup, 1/2 cup chocolate chips and whisk until well combined.
  3. Once the apples are cooked, stir them into the oat mixture until evenly combined. You can also add protein powder to this recipe. To add protein, add in 2 scoop protein and add an additional 1/2 cup milk.
  4. If you’re using a granola mold, fill it evenly with the mixture. Otherwise, spread the mixture into a greased or parchment-lined 9×9-inch baking pan. Bake at 375°F for 25–30 minutes, until set and lightly golden.
