chipotle honey beef tacos

If you’re craving something bold, smoky, and just a little bit sweet, these Honey Chipotle Beef Tacos are going to hit the spot. Made with grassfed chuck roast, this recipe brings together rich, slow cooked flavor with just the right kick from chipotle peppers in adobo. The honey balances the heat beautifully, creating a deep, layered flavor that tastes like it’s been cooking all day but thanks to the Instant Pot, it’s ready in a fraction of the time.

I love serving this shredded beef in warm grain-free tortillas (Siete Foods is my go-to) and topping it with bright, tangy pickled red onions, crumbly queso fresco, and fresh cilantro. A good squeeze of lime over the top brings everything together. These tacos are perfect for weeknight dinners or casual weekend gatherings — they’re hearty, nourishing, and incredibly satisfying. And if you have leftovers, they’re just as good the next day tossed into a salad or tucked into a grain bowl.

Let the Instant Pot do the heavy lifting while you enjoy the aroma of smoky chipotle and sweet honey filling your kitchen. This is one of those recipes that feels like comfort food, but with a fresh, whole ingredients twist. Whether you’re feeding a crowd or just your family, these tacos are a guaranteed hit.

My Favorite Brands to Use in This Recipe:

  • Grass Fed Beef: opt for 100% grass-fed, organic beef for higher omega-3s, better nutrient content, and a cleaner protein source. Unlike conventionally raised beef, which often contains antibiotics and hormones, grass-fed beef is rich in conjugated linoleic acid (CLA), antioxidants, and essential vitamins like B12 and iron. The higher omega-3 fatty acid content supports heart health, brain function, and reduced inflammation, making it a superior choice for those looking to improve overall wellness. Additionally, grass-fed beef is more sustainable and environmentally friendly, as it comes from cattle that graze naturally rather than being fed grain-based diets.
  • Kettle & Fire Organic Beef Broth – Made from slow-simmered, grass-fed beef, this broth is packed with collagen, minerals, and amino acids that support gut health and immunity. It’s also certified organic and free from artificial flavors or preservatives, making it a superior choice for rich, nourishing soups and one-pan meals.

Honey Chiptole Beef Tacos

Ingredients

  • 3 lb Grassfed Chuck Roast
  • 1/2 cup Honey
  • 2 Chiptole Peppers in Adobe Sauce
  • 4 tbsp Chiptole In Adobe Sauce
  • 1 tsp Garlic, Onion, Cumin Powder
  • 1 cup Beef Broth (I like the brand Kettle & Fire)
  • Tortillas (I like the brand Siete Foods)
  • Limes
  • Pickled Red Onions
  • Queso Fresco
  • Cilantro

Instructions

  1. Set your Instant Pot to Sauté mode and spray the insert with avocado oil. Pat the chuck roast dry, then sear on both sides until browned (about 2–3 minutes per side).
  2. In the pot, stir together: Honey, Diced chipotle pepper in adobo, Chipotle adobo sauce, Beef broth, Garlic powder, Onion powder, Cumin, Salt, Pepper over the chuck roast.
  3. Secure the lid and set the Instant Pot to Pressure Cook on High for 1 hour.
  4. Once the timer ends, allow pressure to naturally release or carefully manually release it. When the beef is fork-tender, shred it directly in the pot and mix it with the juices to keep it moist.
  5. Squeeze fresh lime juice over the shredded beef and sprinkle with chopped fresh cilantro.
  6. Fill warm tortillas with the honey chipotle shredded beef and top with pickled onions and queso fresco. Serve warm.
