Crispy Chicken Caprese with Blistered Tomatoes, Burrata & Basil

This crispy Chicken Caprese is a total showstopper comforting, fresh, and bursting with flavor in every bite. It’s one of those recipes that feels both special and simple, making it perfect for a cozy weeknight dinner or a laid-back weekend meal with friends. The golden pan-fried chicken cutlets are crispy on the outside and juicy on the inside, layered with sweet blistered cherry tomatoes, creamy burrata, and bright, fragrant basil. A drizzle of balsamic glaze brings it all together with a tangy-sweet finish that elevates the whole dish.

What I love most about this recipe is how it balances comfort with freshness. It’s hearty enough to satisfy but made with clean, whole ingredients that nourish. I use organic chicken and simple pantry staples, plus I swap in bone broth instead of wine to add depth and extra nutrients. It’s a meal that looks impressive on the plate but is truly easy to pull together. And if you serve it over peppery arugula like I do, it becomes a vibrant, well-rounded dish that everyone at the table will love.

My Favorite Brands to Use in this Recipe:

  • Paleo Powder Breadcrumbs– These grain-free breadcrumbs are my go-to for crispy, gluten-free breading! They’re made with a blend of almond flour, flaxseed, and seasonings, giving the chicken a crunchy, golden coating without the use of traditional breadcrumbs or processed flours.
  • Kettle & Fire Organic Bone Broth – Made from slow-simmered, grass-fed bones, this broth is packed with collagen, minerals, and amino acids that support gut health and immunity. It’s also certified organic and free from artificial flavors or preservatives, making it a superior choice for rich, nourishing soups and one-pan meals.
  • Organic Vegetables – Organic produce is grown without synthetic pesticides or GMOs, preserving natural nutrients and flavors while reducing exposure to toxins. Opting for fresh, organic vegetables ensures you’re getting the cleanest, most nutrient-dense ingredients in every bite.
  • Chosen Foods Avocado Oil – A high smoke point (up to 500°F), which makes it perfect for achieving that golden, crispy crust without breaking down or burning like other oils. It’s also made from naturally refined, non-GMO avocados and contains heart-healthy monounsaturated fats so it’s a nourishing choice I feel good about using in my kitchen, especially when cooking for my family.
  • Bell & Evans Organic Chicken – Their chickens are raised without antibiotics or added hormones, fed a 100% organic, all-vegetable diet, and humanely cared for from hatch to harvest. What truly sets them apart is their air-chilled process. Instead of using chlorinated water baths like many brands, Bell & Evans air-chills their chicken—resulting in better flavor, improved texture, and no added water weight. It means a crispier sear, juicier bites, and a more pure, natural taste. I trust it every time I want to serve something clean, simple, and truly delicious.

Chicken Caprese

Prep Time5 minutes
Cook Time29 minutes

Ingredients

  • 4 Chicken Breasts
  • 3 Eggs
  • 1/2 cup All-Purpose Flour
  • 2 cups Cherry Tomatoes
  • 1/2 cup Fresh Basil Leaves
  • 3 cloves Garlic
  • 1/4 cup Kettle & Fire Bone Broth (sub for white wine)
  • 1 tsp Lemon Juice & Lemon Zest
  • 2 Burrata
  • 2 tbsp Balsamic Glaze
  • Avocado Oil to shallow fry chicken cutlets
  • Fresh Motz Cheese for Topping
  • Argula

Instructions

  1. Start by pounding the chicken breasts evenly thin using a meat mallet, this helps them cook evenly and stay juicy. Season with kosher salt and black pepper.
  2. Set up a dredging station with three bowls: one with flour, one with whisked eggs, and one with your breadcrumbs. Dredge each chicken piece in flour, dip in egg, then coat thoroughly in breadcrumbs, gently pressing them to stick.
  3. Heat about ½ inch of avocado oil in a cast iron skillet over medium-high heat until it reaches 325°F. Carefully fry each cutlet for 2–3 minutes per side, or until golden and crispy. Set on a paper towel-lined plate to drain.
  4. In the same skillet, heat 2 tbsp olive oil over medium heat. Add cherry tomatoes and let them sit undisturbed for 2 minutes so they begin to blister. Stir occasionally for another 3 minutes until charred. Add garlic and salt; cook for 1 minute until fragrant. Deglaze with bone broth and let it reduce by half (about 2–3 minutes). Remove from heat.
  5. In a bowl, mix the blistered tomatoes with fresh basil and a splash of lemon juice.
  6. Place the crispy chicken cutlets on a serving platter. Spoon the warm tomato-basil mixture over the top, then dot with torn burrata, sprinkle with lemon zest, and finish with a drizzle of balsamic glaze.
    Serve over arugula!
