Chimichurri Sauce & Sweet Potato Mash – A nourishing, feel-good dinner that’s bursting with flavor
If you’re craving something that feels indulgent yet still clean and vibrant, this Chimichurri Sauce & Sweet Potato Mash is one of those meals that hits all the right notes. It’s hearty, satisfying, and absolutely packed with fresh flavor without feeling too heavy.
The steak is pan-seared or grilled to perfection, seasoned simply to let the natural richness shine. But what really elevates this dish is the chimichurri sauce. Made with fresh parsley, cilantro, garlic, and a splash of lemon, it’s bright, zesty, and full of life cutting through the richness of the steak in the best way. It’s one of those sauces you’ll want to drizzle over everything.
And then there’s the creamy mashed sweet potatoes. They add just the right amount of natural sweetness and buttery texture, perfectly balancing the savory steak and punchy sauce. You can make them with classic cream and butter, or easily keep them dairy-free using coconut milk and olive oil both ways are delicious.
This meal feels like a treat, but it’s made with real, whole ingredients that nourish your body. Once you try it, you’ll be adding it to your regular rotation.
My Favorite Brands to Use in this Recipe:
- Grass Fed Steaks – Cleaner, more natural option packed with nutrients your body thrives on. One standout is CLA (conjugated linoleic acid), a powerful fatty acid found in significantly higher amounts in grass-fed beef compared to grain-fed. CLA has been linked to a variety of health benefits, including improved metabolism, reduced inflammation, and even potential cancer fighting properties. Combined with higher levels of omega-3s and antioxidants, grass-fed steaks offer a nutrient dense, flavorful choice that supports both your health and ethical, sustainable farming.
- Extra Virgin Olive Oil – Single source extra virgin olive oil is a game-changer for both flavor and health. Unlike mass produced blends, it’s harvested from one farm or region, which means you get maximum purity, traceability, and freshness. Packed with heart-healthy fats, polyphenols, and antioxidants, this high-quality oil supports inflammation reduction and overall wellness.
- Kerrygold Butter -Rich, creamy favorite for good reason made from the milk of grass-fed Irish cows, it’s naturally full of flavor and nutrients. Compared to conventional butter, it contains higher levels of beta-carotene, vitamin K2, and heart-healthy fats like CLA (conjugated linoleic acid).
- Organic Grass Fed Milk – Comes from cows that are 100% grass-fed, results in milk that’s richer in omega-3s, CLA (conjugated linoleic acid), and vitamins like A and K2. It’s better for your body, better for the cows, and better for the planet thanks to regenerative, pasture-based farming. Plus, the creamy, clean taste speaks for itself.

Chimichurri Sauce & Sweet Potato Mash
Ingredients
- 2 Grassfed Ribeye or Sirloin Steaks
- 1/2 cup Fresh Parsley
- 1/4 cup Fresh Cilantro
- 1 tbsp Fresh Oregano
- 2 tbsp Lemon Juice
- 1/4 cup Extra Virgin Olive Oil
- 2 tbsp Red Wine Vinegar (or apple cider vinegar)
- 2 cloves Garlic
- 2 large Sweet Potatoes
- 1/4 cup Butter
- 1/2 cup Heavy Cream or Milk
- 1/4 tsp Cinnamon
- Garlic Powder, Salt & Pepper, Chili Flakes
Instructions
- Peal & boil the sweet potato chunks in salted water for about 12–15 minutes, or until fork-tender. Drain and return them to the pot. Add butter, cream (or coconut milk), cinnamon (if using), salt, and pepper. Mash until smooth and creamy.
- In a blender or food processor, combine all the sauce ingredients: parsley, cilantro, oregano, lemon juice, olive oil, vinegar, garlic, chili flakes, salt, and pepper. Blend until smooth. If it’s too thick, add a little water or more oil to thin it out.
- Preheat your grill or skillet over medium-high heat. Rub the steaks with olive oil and season generously with salt, pepper, and garlic powder. Cook for 4–6 minutes per side or until desired doneness (130°F for medium-rare). Let the steaks rest a few minutes before slicing.
- Spoon mashed sweet potatoes onto each plate. Add steak slices alongside or over the mash. Drizzle generously with green sauce or serve it on the side.
