This meal is the definition of cozy comfort food: nourishing, flavorful, and surprisingly easy to pull together. Juicy honey-balsamic glazed chicken thighs pair perfectly with creamy goat cheese mashed potatoes and caramelized roasted carrots for a balanced, feel-good dinner that tastes like something from your favorite restaurant but comes together right at home. The sweetness of the honey and the tang of the balsamic complement each other beautifully, while the goat cheese adds a creamy richness that ties everything together. A touch of orange and thyme brings a pop of brightness, making every bite comforting yet fresh. It’s the kind of wholesome meal that’s perfect for slow weekends, cozy nights in, or when you just want something that feels a little special.
My Favorite Brands to Use in This Recipe:
- Bell & Evans Organic Chicken – Their chickens are raised without antibiotics or added hormones, fed a 100% organic, all-vegetable diet, and humanely cared for from hatch to harvest. What truly sets them apart is their air-chilled process. Instead of using chlorinated water baths like many brands, Bell & Evans air-chills their chicken resulting in better flavor, improved texture, and no added water weight. It means a crispier sear, juicier bites, and a more pure, natural taste. I trust it every time I want to serve something clean, simple, and truly delicious.
- Organic Vegetables– Organic produce is grown without synthetic pesticides or GMOs, preserving natural nutrients and flavors while reducing exposure to toxins. Opting for fresh, organic vegetables ensures you’re getting the cleanest, most nutrient-dense ingredients in every bit.
- Kerrygold Butter -Rich, creamy favorite for good reason made from the milk of grass-fed Irish cows, it’s naturally full of flavor and nutrients. Compared to conventional butter, it contains higher levels of beta-carotene, vitamin K2, and heart-healthy fats like CLA (conjugated linoleic acid).
- Organic Grass Fed Milk – Comes from cows that are 100% grass-fed, results in milk that’s richer in omega-3s, CLA (conjugated linoleic acid), and vitamins like A and K2. It’s better for your body, better for the cows, and better for the planet thanks to regenerative, pasture-based farming. Plus, the creamy, clean taste speaks for itself.

- 1 tsp Salt
- 3 cloves Garlic
- 1 tsp Dried Thyme
- Salt & Pepper
Goat Cheese Mashed Potatoes:
- 2 lbs Organic Yukon gold potatoes, washed and scored
- 4 tbsp Butter
- 1 cup Milk
- 2 cloves Garlic
- 4 oz Goat Cheese
- Fresh Thyme, Salt & Pepper
Roasted Carrots:
- 1 bunch Organic Whole Carrots
- 2 tbsp Olive Oli
- 1 tbsp Honey
- 1 tbsp Balsamic Vinegar
- Fresh Thyme, Salt & Pepper, Zest of 1/2 Orange
Glaze:
- 2 tbsp Balsamic Vinegar
- 1 tbsp Honey
- 1 tbsp Butter
- Salt & Pepper
Instructions
- Whisk together all the marinade ingredients in a large bowl. Add the chicken and toss to coat. Cover and refrigerate for at least 30 minutes (up to 2 hours).
- Score the potatoes and place them in a pot covered with cold water (about an inch above the potatoes). Add salt and bring to a boil. Cook for 20–30 minutes, until fork-tender.
- While the potatoes cook, preheat your oven to 350°F.
- Remove the chicken from the fridge and let it sit at room temp while you prepare the carrots. Toss the carrots with olive oil, honey, balsamic, salt, pepper, and orange zest. Spread on a baking sheet.
- Add the chicken to a separate sheet pan or dish and roast both for 35–45 minutes, or until the chicken reaches 160°F internally. Check the carrots at 35 minutes — pull them if they’re caramelized and tender.
- In a small pot, gently warm the milk and butter with the smashed garlic and thyme. Let it simmer for a few minutes, then strain before using.
- Drain and peel the cooked potatoes. Mash or rice them, slowly adding the infused milk and butter. Fold in the goat cheese until creamy. Season with salt and pepper and keep warm.
- In a small saucepan over medium heat, combine balsamic, honey, salt, and pepper. Simmer for 2–3 minutes until slightly thickened, then stir in the butter for a silky finish. Adjust seasoning if needed.
- Spoon a bed of goat cheese mashed potatoes onto each plate, top with a chicken thigh, drizzle with the balsamic glaze, and add roasted carrots on the side.
