This salad is one of those meals that checks every box: hearty, colorful, and full of flavor, yet made entirely with nourishing, whole ingredients. It combines juicy, spice-rubbed chicken with caramelized sweet potatoes, crisp apples, creamy goat cheese, and a tangy honey-balsamic Greek yogurt dressing that ties everything together.
I first made this salad on a Sunday when I was prepping meals for the week and wanted something that felt both cozy and refreshing a balance of fall flavors that still worked any time of year. The mix of warm roasted veggies and cool, crisp romaine makes it just as good for lunch on a busy weekday as it is for an easy dinner after a long day.
It’s packed with protein, fiber, and antioxidants, making it a nourishing meal that supports energy and recovery. And the best part? Every ingredient has a purpose from the omega-rich walnuts to the creamy goat cheese that adds just the right amount of indulgence. It’s proof that healthy food can be simple, satisfying, and so full of flavor.
My Favorite Brands to Use in This Recipe:
- Bell & Evans Organic Chicken – Their chickens are raised without antibiotics or added hormones, fed a 100% organic, all-vegetable diet, and humanely cared for from hatch to harvest. What truly sets them apart is their air-chilled process. Instead of using chlorinated water baths like many brands, Bell & Evans air-chills their chicken resulting in better flavor, improved texture, and no added water weight. It means a crispier sear, juicier bites, and a more pure, natural taste. I trust it every time I want to serve something clean, simple, and truly delicious.
- Organic Vegetables– Organic produce is grown without synthetic pesticides or GMOs, preserving natural nutrients and flavors while reducing exposure to toxins. Opting for fresh, organic vegetables ensures you’re getting the cleanest, most nutrient-dense ingredients in every bit.
- Siggi’s – Made with simple ingredients and minimal added sugar just milk and live active cultures. As a traditional Icelandic-style yogurt, or skyr, it’s naturally higher in protein and thicker in texture, which helps keep you fuller longer. Plus, Siggi’s uses milk from grass-fed cows and avoids artificial flavors, sweeteners, or thickeners, making it a clean, nourishing choice I trust for everyday meals and snacks.
- Organic Nuts —Organic nuts are grown without harmful pesticides or synthetic chemicals, making them a cleaner, more nutrient-dense choice for your body. They’re rich in healthy fats, protein, and antioxidants without the chemical residues often found in conventional varieties. Choosing organic also supports sustainable farming practices that protect the soil, water, and planet. It’s a simple switch that makes a big difference for your health and the environment.

Fall Salad
Ingredients
For the Salad:
- 1 head Organic Romaine Lettuce
- 1 lb Organic Chicken
- 1 cup Sweet Potatoes
- 1 cup Organic Apple
- 1/4 cup Goat Cheese
- 1/4 cup Walnuts
- 1/4 cup Cranberries
- Cumin, Coriander, Salt, Pepper, Avocado Oil
For the Dressing:
- 1/2 cup Greek Yogurt
- 1/4 cup Balsamic Vinegar
- 1 tsp Dijon Mustard
- 1 tsp Honey
- Juice from half a lemon
- Salt, Pepper, Olive Oil
Instructions
- Preheat oven to 425°F (220°C) for the sweet potatoes. Cut the sweet potatoes into 3/4-inch cubes. Toss the sweet potato cubes with avocado oil, salt, and pepper. Mix until coated. Roast at 425°F for 18–25 minutes, turning once halfway through, until edges are golden and potatoes are tender when pierced with a fork. Remove from oven and set aside to cool slightly.
- Season chicken on both sides with salt, pepper, cumin, coriander. Preheat oven to 400°F (200°C). Roast 18–25 minutes depending on thickness, until internal temp 165°F. Let rest, then slice.
- In a small dry skillet, toast chopped walnuts over medium heat for 2–4 minutes, shaking the pan, until fragrant. Watch closely to avoid burning. Set aside. Core and dice the apple into bite-sized cubes (leave the skin on for texture and color). Toss apple pieces with a few drops of lemon juice so they don’t brown while you finish the salad.
- Whisk together in a bowl (or use a small jar and shake): 1/2 cup Greek yogurt, 1/4 cup balsamic vinegar, 1 tsp Dijon mustard, 1 tsp honey, Juice from ½ lemon, salt & pepper to taste (start with 1/4 tsp salt) While whisking, stream in 1–2 tbsp olive oil to loosen and slightly emulsify the dressing. Taste and adjust: more honey if you want sweeter, more balsamic for tang, or a splash of water to thin.Tip: If you prefer a thinner, oilier dressing, swap half the yogurt for 2–3 tbsp olive oil or add a tablespoon of water.
- Chop or tear 1 head romaine into bite-sized pieces and put in a large bowl. Add 1 cup roasted sweet potatoes (cooled a bit), 1 cup diced apple, 1/4 cup cranberries, 1/4 cup toasted walnuts, and 1/4 cup goat cheese. Toss lightly with about 3–4 tbsp dressing (reserve extra for people who want more).Arrange sliced chicken over the top and finish with an extra sprinkle of goat cheese and walnuts if desired. Serve with extra dressing on the side.
