Ingredients

Chicken Bites

  • 1 lb Organic Chicken
  • 2 Eggs
  • 1.5 cups Bread crumbs
  • 1 tsp Salt and Pepper
  • 1/2 tsp Paprika
  • 1/3 cup Parmesan
  • Avocado Oil Spray
  • 1 cup Buffalo or Hot Sauce of Choice
  • 1/3 cup Honey

Homemade Ranch

  • 1/2 cup Chosen Foods Avocado Mayo
  • 1/3 cup Sour Cream
  • 2 tbsps Buttermilk
  • 1 tbsps White Vinegar
  • 2 tsps Onion Powder
  • 2 tsps Garlic Powder
  • Fresh Herbs – Chive, Parsley, Green Onion, Cilantro, Dill

Instructions

  1. Set your oven to 450°F.
  2. Cube the chicken into bite-sized pieces (about 1 inch) and set aside.
  3. In a shallow bowl, scramble the eggs. In another bowl, mix bread crumbs, salt, pepper, smoked paprika, and grated parmesan (if using).
  4. Dip each chicken piece into the egg, let the excess drip off, and coat in the seasoned bread crumbs. Place on a parchment-lined baking tray. Repeat for all chicken pieces.
  5. Spray the chicken with avocado oil or other cooking spray. Bake for 15–17 minutes, then flip each piece. Bake for an additional 6–8 minutes.
  6. In a liquid measuring cup, combine the buffalo or hot sauce and honey. Pour over the chicken and toss to coat evenly.
  7. Return the coated chicken to the oven or air fryer for 5–6 minutes to caramelize the sauce.
  8. Pair with ranch or enjoy in a chicken wrap!
