Perfect for a Halloween dinner party, meal prep, or simply adding some autumn flair to your weeknight dinners, this dish combines the nostalgia of carved pumpkins with a nutritious, hearty filling.

And the best part? This recipe features grass-fed beef sourced directly from the farmlands of Illinois, ensuring high-quality protein with unmatched freshness and flavor. If you’ve never tried grass-fed beef before, the vibrant red color and rich taste speak for themselves!

Why Grass-Fed Beef is a Better Choice

Grass-fed beef isn’t just a buzzword—it’s a healthier and more sustainable option compared to conventionally raised beef. Here’s why:

  1. Higher Nutritional Value
Grass-fed beef is rich in omega-3 fatty acids, which support heart health and reduce inflammation. It also contains higher levels of vitamins A and E, along with antioxidants like glutathione.
  2. Fewer Additives and Hormones
Unlike conventionally raised beef, which is often treated with antibiotics and hormones, grass-fed beef is raised on natural diets, free of unnecessary chemicals.
  3. Sustainability
Grass-fed farming practices are often more sustainable and environmentally friendly, supporting regenerative agriculture and reducing greenhouse gas emissions.
  4. Superior Flavor
The natural diet of grass-fed cattle results in a more robust and flavorful beef, making it perfect for dishes like these stuffed peppers.

Benefits of Using Fresh, Whole Ingredients

This recipe also shines thanks to its reliance on fresh, whole ingredients like orange bell peppers, onions, garlic, and diced tomatoes. These ingredients not only enhance the taste of the dish but also bring a variety of health benefits:

  • Bell Peppers: Packed with vitamin C, fiber, and antioxidants, these vibrant veggies add a sweet, crunchy base to the dish.
  • Onions and Garlic: Known for their anti-inflammatory and immune-boosting properties, they also add depth and flavor.
  • Diced Tomatoes and Tomato Paste: A great source of lycopene, a powerful antioxidant that supports heart health and fights free radicals.

Why These Stuffed Peppers Are a Healthy Choice

  1. Low in Carbs, High in Nutrients
Bell peppers are naturally low in carbohydrates and high in fiber, making them a great choice for a balanced meal.
  2. Rich in Protein
Grass-fed beef provides a high-quality protein source, helping to keep you full and energized.
  3. Antioxidant-Packed
Ingredients like tomatoes, garlic, and parsley are loaded with antioxidants that support overall health and reduce inflammation.
  4. Wholesome and Homemade
By making this dish at home, you’re skipping processed fillers, artificial flavors, and excessive sodium found in many store-bought stuffed pepper recipes.

  • 2 Garlic Cloves (minced)
  • 2 tablespoon Olive Oil
  • 1 can Diced Organic Tomatoes
  • 3 tablespoon Tomato Paste
  • 1 pound Grass Fed Ground Beef
  • 1 teaspoon Garlic Powder, Onion Powder, Oregano, Cumin
  • 1/2 cup Shredded Organic Cheddar Cheese
  • 1/2 cup Shredded Organic Mozzarella Cheese
  • Parsley (chopped)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the orange peppers and scoop out the seeds and membranes. Using a small paring knife, carve Jack O’Lantern faces into the peppers.
  3. Heat olive oil in a large skillet over medium heat. Add the diced onion and garlic, cooking until softened and fragrant.
  4. Add the grass-fed ground beef and cook until browned. Drain any excess fat.

  6. Fill each carved pepper with the beef mixture, pressing gently to pack it in. Top each pepper with a mix of shredded cheddar and mozzarella cheese.
  7. Place the stuffed peppers in a baking dish. Add a splash of water or broth to the bottom of the dish to keep them moist. Cover with foil and bake for 25 minutes.
  8. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  9. Sprinkle with fresh parsley and scallions for a pop of color and added flavor. Serve warm and enjoy!
