These Lemon Blueberry Protein Muffins are a bright and nourishing twist on a classic favorite and they’re quickly becoming a go-to in our kitchen. Bursting with juicy blueberries and fresh citrus flavor, they strike the perfect balance between wholesome and indulgent. What sets them apart is the ingredient list: clean, real staples like almond flour, coconut sugar, flaxseed, and a scoop of vanilla protein powder for a satisfying, nutrient-dense boost.
They’re naturally sweetened with maple syrup and coconut sugar no refined sugars here and the lemon zest adds a fresh, zippy brightness to every bite. The texture is soft and fluffy thanks to the almond flour and flax, while the protein makes them a more filling option for busy mornings or mid-afternoon snacks. And let’s not forget the blueberry glaze on top it’s simple, naturally colored, and gives these muffins just the right touch of something special.
Whether you’re meal prepping for the week or just baking something cozy and nourishing, these muffins are a feel good choice you’ll want to come back to again and again.
My Favorite Brands to Use in this Recipe:
- Almond Flour – I love using almond flour in my baking because it’s a wholesome, nutrient-rich alternative to traditional flour. Made from finely ground almonds, it’s naturally gluten-free and packed with healthy fats, fiber, and protein which helps make baked goods more satisfying and blood sugar–friendly. Almond flour also gives muffins, cookies, and breads a soft, moist texture with a subtly nutty flavor that pairs beautifully with ingredients like berries, citrus, and dark chocolate. It’s one of those pantry staples I always keep on hand for cleaner, feel-good baking.
- Organic Coconut Sugar – It’s less processed than refined white sugar and retains more nutrients from the coconut palm. It has a rich, caramel-like flavor that adds depth to baked goods without overpowering them. Plus, it has a lower glycemic index than regular sugar, which means it’s less likely to cause blood sugar spikes. Sourced from organic farms, it’s a cleaner, more nourishing option I feel good about using in my kitchen.
- Ground Flax – Rich in fiber, plant-based omega-3s, and lignans compounds known for their antioxidant properties. In baking, ground flax helps support digestion and adds a gentle nutty flavor that blends seamlessly into muffins, pancakes, and breads. It also acts as a natural binder, especially helpful in egg-free recipes. Just a few spoonfuls go a long way in making your baked goods more nourishing and satisfying.
- Just Ingredients Vanilla Protein Powder – My favorite protein brand! Rich and creamy vanilla bean, all-natural protein powder made with four different protein sources and flavored without artificial sweeteners or sugar alcohols. Made with non-denatured 100% grass-fed non-denatured whey from New Zealand.
- Wholesome Organic Powdered Confectioners Sugar – Made from organic cane sugar, meaning it’s grown without synthetic pesticides, herbicides, or harmful chemicals. It is certified Non-GMO, ensuring that no genetically modified ingredients are used and free from artificial preservatives, colors, and flavors. Unlike many conventional powdered sugars that use cornstarch as an anti-caking agent, Wholesome uses organic tapioca starch.
