Why Grass-Fed Steak is the Star

The foundation of this recipe is grass-fed steak. Grass-fed beef is packed with omega-3 fatty acids, higher in antioxidants like vitamin E, and free from antibiotics or growth hormones. Its rich, natural flavor pairs perfectly with the zesty carne asada marinade, making every bite an absolute treat. Did you know that grass-fed beef is one of the most nutrient-dense proteins? 🧠 It has nearly double the conjugated linoleic acid (CLA) of grain-fed beef. CLA is a powerful nutrient that helps defend against cancer 👊🏼🎗️. A study showed that women with high CLA-rich diets had a 60% lower risk of breast cancer compared to those who had little to no CLA in their diets.

  • 1 pound Grass Fed Steak
  • 1/4 cup Cilantro
  • 1 Lime
  • 2 tsp Cumin & Oregano
  • 1 tsp Soy Sauce
  • 3 Garlic Cloves (minced)
  • Salt,Pepper,Avocado Oil

Mashed Potatoes

  • 5 Organic Gold Potatoes
  • 1/2 cup Organic Milk
  • 2 tbsp Organic Unsalted Butter

Loaded Guacamole

  • 3 Avocados
  • 1/2 Lime
  • 1/4 Red Onion (diced)
  • 2 tbsp Cilantro (chopped)
  • 1/4 cup Organic Black Beans
  • 1/4 cup Organic Corn
  • 1/4 cup Tomatoes (diced)
  • 1/2 tsp Cumin
  • Cotjia Cheese (crumbled)

Instructions

  1. In a medium bowl, whisk together the cilantro, lime juice, cumin, oregano, soy sauce, garlic, salt, and pepper. Add the grass-fed steak and let it marinate in the refrigerator for at least 2 hours (or up to 8 hours for maximum flavor).
  2. When ready to cook, heat a skillet over medium-high heat with a drizzle of avocado oil. Sear the steak for 4–5 minutes per side or until your desired level of doneness is reached. Let the steak rest for a few minutes before slicing it against the grain into bite-sized chunks.
  3. Peel and chop the gold potatoes into evenly sized pieces. Boil them in salted water for about 25–30 minutes, or until tender when pierced with a fork. Drain and transfer to a mixer or large bowl.
  4. Add the milk, butter, a sprinkle of rosemary, and season with salt and pepper. Mix until smooth and creamy. For extra flavor, you can add roasted garlic or a pinch of smoked paprika.
  5. In a large bowl, mash the avocados until creamy but slightly chunky. Stir in the lime juice, red onion, cilantro, black beans, corn, tomatoes, cumin, and a pinch of salt and pepper. Top with crumbled cotija cheese for a tangy finish.
  6. Start with a generous base of creamy mashed potatoes. Top with sliced carne asada, a heaping scoop of loaded guacamole, and garnish with extra cilantro, lime wedges, or cotija cheese. For added crunch, sprinkle with crushed tortilla chips or roasted pepitas.
