mini Christmas chocolate tress

There’s something extra magical about Christmas desserts when they’re tiny, festive, and feel like a little treat you can grab straight from the fridge. These Mini Chocolate Christmas Trees are one of those “wow” snacks that look bakery-worthy, but are actually super simple to make especially when you start with a clean-ingredient cake mix.

I love this recipe because it’s made with ingredients I feel good about: Simple Mills cake mixes, avocado oil, and a creamy filling that’s lightly sweetened. The filling gives that soft, truffle-like bite, and the Enjoy Life chocolate coating makes them feel rich and holiday-special without a million steps.

Whether you’re making these for a holiday party, a cozy movie night, or a cute baking project with kids, they’re the kind of dessert that disappears fast. Bonus: you can decorate them a dozen different ways sprinkles, crushed candy canes, or even a drizzle of white chocolate so every batch feels a little different and totally festive.

Ingredients

Cake Mix:

  • 1 package Simple Mills Vanilla Cake Mix
  • 1 package Simple Mills Chocolate Cake Mix
  • 6 Eggs
  • 1/2 cup Avocado Oil
  • Christmas Tress Cut Out

Cream Filling:

  • 1/4 cup Softened Butter
  • 1/4 cup Softened Cream Cheese
  • 2 tsp Maple Syrup
  • 1/2 tsp Vanilla

Chocolate Coating:

  • 1 package Enjoy Life Chocolate Chips
  • 2 tbsp Coconut Oil
  • Dye Free Sprinkles (for topping)

Instructions

  1. Preheat oven to 350°F (or whatever your Simple Mills box says). Line a 9×13 pan (or two 8x8s) with parchment or grease well.
  2. In a large bowl, mix 1 package Simple Mills vanilla cake mix, 3 eggs, and 1/4 cup Avocado Oil. In another bowl, mix 1 package Simple Mills chocolate cake mix, 3 eggs, and 1/4 cup Avocado Oil.
  3.  Pour batter into the pan(s) separately and bake according to the cake mix directions, until a toothpick comes out clean.
  4. Let the cake cool in the pan for 10–15 minutes, then transfer to a rack and cool fully.
  5. Use a small Christmas tree cookie cutter to cut out cake trees and then cut each tree in half.
  6. Beat together ¼ cup softened butter, ¼ cup softened cream cheese, ½ tsp vanilla, pinch of salt, and 2 tsp maple syrup (add more if you want it sweeter) until fluffy.
  7. Pair up one vanilla tree and one chocolate tree. Spread a thin layer of filling on one tree, then top with another to make little “sandwich” trees.
  8. Place filled trees on a parchment-lined tray and freeze 15–20 minutes so they’re firm for dipping.
  9. Melt Enjoy Life chocolate chips with 2–3 tbsp coconut oil. Dip each tree into the chocolate, let excess drip off, then place back on parchment. Add dye-free sprinkles before the chocolate sets.
  10. Let them set at room temp or pop them in the fridge for 10 minutes. Store in the fridge for a firmer bite.
