Made with clean, real-food ingredients and finished with a zesty cilantro-lime slaw, it’s a recipe I keep coming back to especially on weeks when I need a batch cook that’s satisfying and simple

It starts with juicy, fall-apart pulled pork cooked low and slow in primal kitchen foods BBQ sauce, apple cider vinegar, garlic, and onion. It’s paired with fluffy rice (I love using Lundberg Farms) and topped with a tangy slaw made with lime juice, cilantro, and a hint of honey and cumin. Add a few crunchy pickles or sliced jalapeños, and finish it all off with a drizzle of BBQ sauce.

This is a gluten-free, dairy-free, meal-prep-friendly dinner that brings big flavor and supports your health. Whether you’re supporting a loved one through a healing journey or just want a better-for-you version of a comfort classic, this bowl checks every box.

My Favorite Brands to Use in This Recipe:

  • Primal Kitchen BBQ Sauce – Unlike most mainstream BBQ sauces loaded with high‑fructose corn syrup, artificial sweeteners, or refined sugars, Primal Kitchen contains zero added sugar. It’s made entirely from USDA‑organic, Non‑GMO ingredients like tomato paste, apple & balsamic vinegars, mustard, spices, and tapioca starch, with no preservatives, MSG, or cane syrup. It delivers bold flavor without compromising on health offering a clean, transparent, and minimally processed alternative to typical supermarket options.
  • Lundberg Rice – My top choice for health conscious kitchens because it’s organic, non-GMO, and grown using sustainable, eco-friendly farming practices. Unlike conventional rice brands, Lundberg prioritizes soil health, biodiversity, and water conservation so you’re not just nourishing your body, you’re supporting the planet too. Their rice is also tested for arsenic and other contaminants, making it a safer option.
  • Organic Vegetables – Organic produce is grown without synthetic pesticides or GMOs, preserving natural nutrients and flavors while reducing exposure to toxins. Opting for fresh, organic vegetables ensures you’re getting the cleanest, most nutrient-dense ingredients in every bit.

Cook Time1 hour

Ingredients

For the Pulled Pork:

  • 3 lb Boneless Pork Shoulder or Boston butt
  • 1 small Onion
  • 3 cloves Garlic
  • 1 1/2 cup Primal Kitchen BBQ Sauce
  • 1/4 cup Apple Cider Vinegar
  • Salt & Pepper

For the Slaw:

  • 1 bag Organic Coleslaw Mix
  • 3 Green Onions (sliced thin)
  • 1/2 cup Fresh Cilantro
  • 3 tbsp Lime Juice
  • 2 tbsp Avocado Oil or Olive Oil
  • 1 tbsp Apple Cider Vinegar

For Serving:

  • 2 cups Rice (I like the brand Lundberg Farms)
  • Pickles or Jalapeños
  • Green Onions
  • BBQ Sauce for drizzling

Instructions

  1. Place the sliced onion at the bottom of a 6- or 8-quart Instant Pot. Add the pork shoulder on top, sprinkle with minced garlic, and pour BBQ sauce over the meat. (leave some BBQ sauce to top at the end) Drizzle the apple cider vinegar around the pork so it mixes with the onions. Set the Instant Pot to “Sauté” and sear the pork for a few minutes on each side for extra flavor.
  2. Lock the lid and cook on high pressure for 1 hour. Once done, allow a natural release for 10–15 minutes before manually releasing the rest.
  3. Shred directly in the pot using two forks. Mix it well with the juices and season with salt and pepper to taste. Keep warm until ready to serve.
  4. In a mixing bowl, combine all slaw ingredients and toss until well coated. Refrigerate until serving.
  5. In each bowl, add rice, a scoop of slaw, a generous helping of pulled pork, and finish with pickles, reserved green onions, and a drizzle of extra BBQ sauce.
