Instructions
For the Tomatillo Salsa Verde:
- Preheat oven to 450 and line a baking sheet with parchment paper. Remove the husks from the tomatillos and rinse to remove the stickiness. Pat day and place on the baking sheet with sliced onions. Drizzle with avocado oil, sprinkle with salt, and toss to coat. Roast for 15 minutes or until tomatillos are juicy and browned. In a food processor, place the tomatillos, onion, peppers, garlic, avocado oil, lime juice, cilantro, salt. Process until combined.
For the Salsa Verde Chicken:
- In a large bowl, whisk together ½ cup salsa verde, olive oil, lime juice, garlic, chili powder and cumin. (Reserve about ½ cup salsa verde for basting chicken and ½ cup for serving.) Add chicken and toss until fully coated in mixture. Let marinate for 20 minutes.
- Preheat the oven to 350°F and line a baking sheet with parchment paper. Remove the chicken from the marinade and place it on the prepared baking sheet. Spoon a small scoop of salsa verde over each piece of chicken, then bake until the internal temperature reaches 165°F.
- Top each piece of chicken with a slice of Monterey Jack, jalapeño, and red onion. Cook until the cheese has melted and the chicken is cooked through.
