Sourdough Cheesy Bread

Ingredients

  • 500 grams Bread Flour
  • 100 grams Sourdough Starter
  • 10 grams Salt
  • 350 ml Water
  • 150 grams Shredded Cheese (cheddar, mozzarella, or a mix for ultimate cheesiness)
  • A sprinkle of herbs like rosemary, thyme, or garlic powder for extra flavor

Instructions

  1. In a large mixing bowl, combine the bread flour, active sourdough starter, salt, and water. Stir until a rough dough forms. Cover the bowl with a damp cloth and let it rest for 30 minutes to allow the flour to hydrate
  2. After the dough has rested, gently fold in the shredded cheese. Be careful not to overwork the dough as this could affect the final texture.
  3. Cover the bowl again and let at room temperature for 4-6 hours. During this time, perform a series of stretches and folds every 30 minutes for the first 2 hours. This helps build strength and structure in the dough
  4. Once the dough has doubled in size, transfer it to a floured surface. Shape it into a round or oval loaf, depending on your preference. Place the shaped dough onto a piece of parchment paper or into a proofing basket (seam-side up).
  5. Cover the dough and let it proof for another 1-2 hours at room temperature, or refrigerate it overnight for a slower fermentation that enhances the flavor.
  6. Preheat your oven to 250°C (480°F) with a Dutch oven inside. Once hot, carefully transfer the dough into the Dutch oven, score the top with a sharp knife, and cover with the lid. Bake for 20 minutes with the lid on, then remove the lid and bake for another 20-25 minutes until the crust is golden brown and the cheese is bubbling.
