My Favorite Brands to Use in this Recipe:

  • Primal Kitchen BBQ Sauce – Unlike most mainstream BBQ sauces loaded with high‑fructose corn syrup, artificial sweeteners, or refined sugars, Primal Kitchen contains zero added sugar. It’s made entirely from USDA‑organic, Non‑GMO ingredients like tomato paste, apple & balsamic vinegars, mustard, spices, and tapioca starch, with no preservatives, MSG, or cane syrup. It delivers bold flavor without compromising on health offering a clean, transparent, and minimally processed alternative to typical supermarket options.
  • Bell & Evans Organic Chicken – Their chickens are raised without antibiotics or added hormones, fed a 100% organic, all-vegetable diet, and humanely cared for from hatch to harvest. What truly sets them apart is their air-chilled process. Instead of using chlorinated water baths like many brands, Bell & Evans air-chills their chicken resulting in better flavor, improved texture, and no added water weight. It means a crispier sear, juicier bites, and a more pure, natural taste. I trust it every time I want to serve something clean, simple, and truly delicious.
  • Organic Vegetables – Organic produce is grown without synthetic pesticides or GMOs, preserving natural nutrients and flavors while reducing exposure to toxins. Opting for fresh, organic vegetables ensures you’re getting the cleanest, most nutrient-dense ingredients in every bit

Grilled BBQ Chicken Skewer Salad

Prep Time5 minutes
Cook Time28 minutes

Ingredients

  • 2 lbs Organic Boneless Skinless Chicken Breasts
  • 3 tbsp Chosen Foods Avocado Oil
  • 2 cups Primal Kitchen BBQ Sauce
  • 8 6 inches Skewers
  • 1/2 cup Sour Cream
  • 1/2 cup Greek Yogurt
  • 2 tbsp Lemon Juice
  • 1 tsp Onion Powder
  • 2 cloves Garlic (minced)
  • 1/4 cup Fresh Dill, Parsley, Cilantro
  • 4 ears Corn
  • 1 head Organic Romaine Lettuce
  • 6 Green Onions (sliced)
  • 2 cups Tomatoes
  • 1 can Black Beans
  • 1 Avocado

Instructions

  1. Pound the chicken to an even ½-inch thickness and cube into 2-inch pieces. In a large bowl, toss with avocado oil and 1 cup of BBQ sauce. Let it marinate for at least 20 minutes (or up to 8 hours in the fridge).
  2. In a small bowl, mix together sour cream, yogurt, lemon juice, onion powder, garlic, fresh dill, parsley, cilantro, salt and pepper until smooth. Refrigerate until ready to use. This ranch keeps well in the fridge for up to a week!
  3. Preheat your grill to medium-high (around 350–400°F). Lightly oil the grill grates. Drizzle the corn with avocado oil and grill for 10–12 minutes, turning every 2 minutes until slightly charred and tender.
At the same time, grill the chicken skewers for 3–4 minutes per side. After flipping, brush the cooked side with extra BBQ sauce. Cook until fully cooked through and beautifully charred on both sides.
Let the corn and chicken rest. Once cool enough to handle, slice the corn off the cob.
  4. In a large bowl, toss romaine, green onions, tomatoes, black beans, cilantro, and basil with your desired amount of herby ranch. Add grilled corn and avocado, and gently toss again.
  5. Top your salad bowls with grilled chicken skewers and serve with an extra drizzle of dressing or a lime wedge if you’d like.
