Honey Chipotle Chicken Rice Bowls
Ingredients
Chicken Marinade
- 1 lb Organic Chicken
- 1 can Chipotle Chiles in Adobo Sauce
- 3 tbsp Honey
- 2 tbsp Avocado Oil
- 1/4 cup Cilantro (chopped)
- 1 tsp Cumin
- 1 tsp Salt and Pepper
Rice
- 1 cup White Rice (My go to brand is Lundberg)
- 2 cups Water
Avocado Corn Salsa
- 2 ears Corn (boiled or grilled)
- 1 Avocado (diced)
- 1/4 cup Cilantro (chopped)
- 1 Lime
- 1/2 tsp Salt and Pepper
- 1/4 cup Cotija Cheese
Instructions
- In a small mixing bowl, whisk together the chipotle adobo sauce, honey, avocado oil, cilantro, cumin, salt, and pepper. Place the chicken breasts in a shallow dish or resealable bag and pour the marinade over them. Ensure the chicken is fully coated, then cover and refrigerate for at least 2 hours (or up to 8 hours for maximum flavor).
- Preheat your oven or air fryer to 425°F. Remove the chicken from the marinade and discard any excess marinade. Place the chicken on a baking sheet or air fryer basket. Cook for 20-25 minutes, or until the internal temperature reaches 165°F. For a charred, grilled flavor, broil the chicken for an additional 2-3 minutes. Let the chicken rest for 5 minutes before slicing.
- While the chicken is cooking, rinse the rice under cold water. In a saucepan, bring 2 cups of water to a boil. Add the rice and a pinch of salt, then reduce the heat to low. Cover and simmer for 15-20 minutes (or according to package instructions) until the water is absorbed and the rice is tender. Fluff with a fork and keep warm.
- Boil or grill the corn until tender, then carefully slice the kernels off the cob. In a medium bowl, combine the corn kernels, diced avocado, chopped cilantro, fresh lime juice, salt, and pepper. Toss gently to combine, ensuring the avocado stays intact.
- Start with a base of warm rice in each bowl. Top with sliced or shredded chicken and a generous scoop of avocado corn salsa. If desired, garnish with crumbled cotija cheese for a tangy finish and add lime wedges on the side for an extra citrusy kick.
